Fujita Kanko Inc. oversees over 30 hotels nationwide under the "WHG Hotels" brand, including three unique brands: Washington Hotel, Hotel Gracery, and Hotel Fujita. This year, WHG Hotels launched a breakfast fair named "Spice Up Your Morning," which aims to provide a breakfast experience that motivates early rising, ultimately improving guests’ daily experiences. The initiative has received favorable reviews.

The upcoming third edition of the Spice Up Your Morning series will blend dynamic plant-based ingredients with autumn flavors and locally sourced items. For six weeks, from October 16 to November 30, delightful breakfasts will be offered at around 20 hotels nationwide.

Ari Takanashi, a food coordinator specializing in plant-based recipes, will oversee the main dishes, soups, and desserts available nationwide. The recipes, characterized as "delicious, beautiful, and beneficial for both body and mind," will incorporate familiar Japanese ingredients. Additionally, each hotel will create recipes tailored to local ingredients, ensuring that over 40 menu items are consistently available throughout the fair.


Fall flavors x 3 plant-based menus

Main dish: Grilled "Like Chicken" with chestnut rice

The grilled "Like Chicken" features a delightful blend of soybeans and spices paired with a new chestnut rice dish marinated in olive oil with chestnuts. "Like Chicken" mimics the texture and fiber of real soy-made chicken.

Soup: Creamy sesame soup with superfoods

The flavorful sesame soup has been enhanced using innovative soy cream technology. Choose from six superfood toppings: brown rice crackers, granular konjac, goji berries, wood ear mushrooms, bok choy, and kelp.

Dessert: Apples and Amazake rice pudding

This dessert combines amazake, apples, cinnamon, and creamy soy, highlighting the surprising sweetness of natural ingredients without any added sugar.


Menu supervisor Takanashi Ari remarked, "Plant-based food is often considered 'unknown food.' However, like shojin ryori, which avoids meat and fish, it is rooted in ingredients well-known to the Japanese populace since ancient times. In line with the event's theme, 'Spice Up x SDGs,' we aimed to offer guests new experiences, stimulation, and a sense of wellness. To achieve this, we developed a menu featuring highly nutritious ingredients, such as Japanese superfoods like miso, amazake, and soymilk yogurt, alongside glutinous wheat, brown rice, konjac, and goji berries. Enjoy the blend of plant-based cuisine created by integrating traditional Japanese ingredients and modern technology."
